No you will not access from Mac to needed folders in the iPad. You can make it for your Mac or with jailbroken iPad directly on the iPad

Editor data folder is useless on Touch because can't install any modified datapacks etc. Touch hasn't a ingame editor to load this files. Yes to use graphics like logos kits etc create a Pictures folder and add all this subfolders (kits,logos,facepac...
I will not do a small face pack (too much work, need to sort out about 300k faces). Like i said if you want to use Facepack give a try, most faces are definitely working.
