(New to game) How to use a league not on the FM database

Hi! I'm new to FM as you can tell from the question I'm asking. I was wondering, here I can see certain leagues (such as the Lebanese League) that I can't see on FM19. I can, however, find it on the FM Editor (with the same club names ecc...). So my question is: how can I play in the Lebanese League when I can't find it when starting a new career on FM? (I look under Continents --> Asia... but nothing).
On a side note, how can I change the team's names? Is it through the editor? I have only just bought the game so I honestly don't know anything!
