Real managers to create and play as

Hi all, 

First time posting here. 
I am somewhat of a nerd and I like to create real life football managers, that are not in the game and database. Or at least not in the database if you unselected the country/region they are from. 
So for an example I like to create a real life manager, lets say Cheikh Tidiane Sarr, a former player from the danish league, now a u19 coach in Landskrona in Sweden, and he is not in the game as a coach or manager. So I create him, take over a 3rd division club in Denmark and play as him as a realistic appointment, and I do a journey man save etc etc. Hope you get it. (Don't now if anyone else does this, or if it is just me) 

Every year I struggle more and more to find good candidates. 
Do any of you know any real life managers, perhaps working abroad in obscure places and that are not featured in the game, that would be cool to create and do a save as? Preferably european candidates? Managers/former players/youth staff.

for me as a Croatian it's always Zvonimir Boban, and taking Dinamo Zagreb then.
