It could be caused by high player attributes. Even without modifying the CA, higher attributes can still increase the star rating. The star rating can also vary depending on the quality comparison between players in a club, league, or country, which may cause different star ratings to appear.

You can also find the backup if you enable the game's autosave option.

If the data is text, you cannot modify the value directly unless there are other options; otherwise, you must use a script. Because there is no script to do it, I will create one in the future.
