I had the same issue. Here's what worked for me:

I kept the files in editor data like you have there. When I created a new game, I unchecked the following file: “sortitoutsi.net FM22 Data Update - Derby and Reading points reduction”.
When I uncheck that file, the sortitoutsi custom start date now appears under Africa. I tried unchecking other files but this one seemed to be the issue for me.

If anyone has another/better solution I'd be interested.

Thanx bro. But there is a problem - I even deleted Derby and Reading points reduction from the editor data folder. And still I see only 1 file while creating the game an no custom start date in Africa( Did you add all the files from the save in editor data or in the main FM22 folder?
