Got this message when i tried to submit the team today - it said i had 0 players training with the club?

This is mid season, have got the assistant manager running the training and nothing has changed since the seasons start

Taking one substitute of the 7 out, to leave me with 6 has allowed me to play the game.

Any ideas what the bug is? Is it a bug?

This error message is related to players being homegrown at the club rather than currently training with the club. The competition rules will demand that you have at least 1 homegrown at the club. You can check your players' homegrown status by clicking the views drop-down menu and selecting the full player status view.

Possibly, but do you have actually have any players homegrown at club in your team?

I personally think it's fairly clear tbh, but maybe that's just me. The squad page has a small tab at the bottom displaying the requirements for the next match, keep an eye out for it.
