For example, I was playing Juve with AC Milan, I conceded 5 in the first half, but then won the second half 2-1. Final score was 6-2 obviously.
Why does this keep happening when I play big teams, because against small teams it never happens. Is it a tactical issue or something else (I don't think it is tactical as this has happened with many different tactics)?

Of course it won't happen playing a smaller team. They don't have enough skill to score 5 goals at AC Milan. I think that what's probably happening is that you're too offensive (or maybe your tactic is just too inadequate to the match). They score too much at the beggining and then stop, but that's just normal. Teams tend to get accommodated after they build a good lead.

"Hassle opponents" can be a useful shout as it raises the tempo, tightens your marking and gets your players closing down more, as Kez said this can open gaps against better players so it's sometimes better to use "stand off opponents" which keeps marking loose and zonal but also means your team keep their shape and don't go charging after their markers. If your Asst mentions "player X is getting skinned..." It's a good idea to switch to "stand off..." for a while.
