Creating an all-star team

Hey, I was wondering if there was any way of creating an All-star team similar to Scottish Football League XI for several different leagues? I was thinking the home nations plus the likes of Spain, Italy, germany ect.

I was wondering if it could be set up like a knock out tournement at the end of every season and if not just a simple one off game between the Scottish leagues and the English leagues. I know its a bit of a strange quiery but they have the MLS all-star teams in the game so I thought this may be possible.

They don't have one built in (I'm 99%), but, I'm sure some editor somewhere has, or will, create one eventually.
