Again, the second one you cut contained a little bit of snow as can be seen here: https://sortitoutsi.net/comments/attachment/15607/91193051.png . It also needed to be brightened just a little bit. All done
Also, I'm seeing your original cut. Remember to crop the source before putting it through remove.bg otherwise you get that kind of loss of quality, which is a pity given it was a perfectly good source

The problem with high resolution images is that even after cropping there are more than 500x500 pixels, often after cropping there are 500x700 pixels, is there a trick?

That should be enough. As long as you crop it to the area around the guy's face, even having 100 pixels above and below the face (though it is not recommended, naturally!) leaves a large enough surface area to permit a 250x250 cut without upscaling
