It depends on what resolution your screen is. Flut skin is made to work with 1920x1080 and 100% zoom and 4k and the second options is if you use 2560x1440 screen. and in your preferences you should have sidebar icons only :

Then just put it in your graphics folder :  C:\…..\Documents\Sports Interactive\Football Manager 2021\graphics

When new updates are released you just copy the update over your existing folder and say yes to all overwrites (it is very important that the config is updated) 

Well first you download all the updates. The you apply them in order one by one. This is done by copying each update over the current pack you have. There should be a lot of overwrites with each update otherwise you have done something wrong (say yes to all overwrites). At the end you should be up to date and all the configs should be the latest versions. Hope that make sense to you 👍
